What do you do when your special someone has to eat Paleo or grain free when you’re expected to cook an extravagant meal for Valentine’s Day? Paleo LOBSTER TAILS, of course! 🙂 Really, you could make them any time, but Lobster tails are very inexpensive this time of year, typically, and I know I am all about saving money. Plus, These only take 20 minutes to make! Woohoo!
Here’s what you’ll need for a romantic dinner for two:
2 (6 oz) Lobster Tails, Uncooked (Make sure they are THAWED if you bought them frozen)
2 T. Melted Coconut Oil (OR Good Quality Butter)
1 Clove French Pressed Garlic
Salt & Pepper to Taste
First you’re going to preheat your oven to 350 Degrees F.
Then, you’ll use a pair of kitchen shears to cut through the cartilage down the center of the back of the uncooked lobster tail. Make sure you leave the tail in tact! Don’t remove any part of the shell. Use your little finger to separate the meat from the lower part of the shell. Then, pull the lobster meat through the top of the shell through where you have cut (piggyback style lobster tail!!).
Mix melted coconut oil or butter and fresh-pressed garlic. Place your Lobster tails on a cookie sheet, and brush both prepared tails with melted coconut-oil (or butter) and garlic mixture. Use all of it! Then grind some salt and pepper right over the top, to taste.
You will then bake the tails on the cookie sheet for 15 minutes, or until an internal temperature reaches 140-145 degrees F. It is very important to not overcook! To ensure this, I use an instant-read thermometer.
When they reach the right temperature, remove from the oven and serve with more garlic-butter (or melted coconut oil) and lemon slices to squeeze over the lobster.
