Low-Carb Cauliflower Cakes (Gluten Free, Grain Free, Paleo, Dairy Free, Soy Free, Corn Free)

Hey guys – I know I like easy healthy pre-dinner snacks, and these really fit the bill. They’re easy (As in, no squeezing out water from cooked cauliflower… because who likes doing that?!), and they sure are TASTY!


Let’s just cut to the chase then… You’ll need:
1 Large Head Cauliflower
2 Large Eggs
3/4 Cup Shredded Cheddar Cheese, OR use Dairy Free Cheese Substitue, OR Use THIS if Totally Paleo
3/4 Cup Jake’s Grain-Free Bread Crumbs – Order HERE
1/4 Cup Almond Flour
1 T. Onion Powder
½ teaspoon Cayenne Pepper
Salt & Pepper To Taste
Olive Oil for Frying


First, you’re going to cut your cauliflower florets off into smallish pieces, and cook in boiling water for 10 minutes. Then place drained and cooked cauliflower into your food processor, and pulse until it’s just beginning to look “mashed.” Then, in a large bowl, mix together cooked cauliflower, eggs, cheese, bread crumbs, almond flour, cayenne pepper, onion powder, and salt and pepper.

In a skillet, over medium-high heat, pour olive oil until it is about a quarter of an inch deep. When hot, form cauliflower patties (about 4 inches across) and cook for 3-5 minutes on each side, or until golden brown in color. This makes about 10 cauliflower cakes.
