I know. I know. You’re thinking: What?! This can’t be true!
…But it is. Grain Free Fettuccine Alfredo! This is a low-carb option for those of you that adore their pasta – And this recipe doesn’t require spiralizing any vegetables. It also doesn’t include any starch… so GUILT-FREE NOODLES! It simply requires a trip to your favorite store: Jake’s Gluten Free Market!
For the noodles, I use Shirataki “Miracle Noodles” in their Fettuccini style. They really are a miracle. Shirataki is made from only the soluble fiber of the plant, making it remarkably low in calories. With just 15 calories per serving, it’s a healthy way to enjoy your favorite pasta dishes. The ingredients are: Purified Water, Konnyaku Flour, and Calcium Hydroxide (Limewater).
The noodles are packed in water, so look sort of funny. Don’t be daunted. They really are amazing when they’re prepared the right way (don’t worry, it’s easy!).
Here’s What You Will Need:
1 package Shirataki Fettucini Style “Miracle Noodles” (Find these at our store!)
1 T. Extra Virgin Olive Oil
1 Cup Organic Heavy Whipping Cream
4 T. Organic Kerry Gold Butter
4 Cloves Fresh Pressed Garlic
1 C. Freshly Shredded High Quality Parmesan Cheese
Bring Water in medium-sized pot to boil. In the meantime, drain noodles from package into a colander and rinse well with cool water. The smell can sometimes be a bit “fishy.” Don’t worry – It goes completely away after the rinsing process. Then boil the noodles over medium-high heat for 3 minutes with lid on. Then you’re going to drain and rinse these noodles again! The last step in noodle preparation is putting your pot back on the stove with a Tablespoon on Olive Oil in it, and cooking the noodles in just the olive oil over medium heat for about 5-7 minutes, or until some of the remaining liquid cooks off. Then set aside.
For the Alfredo sauce, melt your butter over medium-low heat in a separate pot. Add your cream and garlic and any spices you desire (Salt, Pepper, Fresh Parsley, Italian Seasoning) once the butter is melted, and whisk until the heavy cream mixture doubles in size and gets frothy. Then, add your Parmesan cheese and whisk until the cheese is fully melted. TA-DA!
Pour over your noodles and you’re done. Fast, easy, and guilt-free indulgence. Could it get any better? Maybe if you add sauteed shrimp, or vegetables…. Mmmmmm.
